Why Fake and Mislabelled Caviar Exists in the UAE
Caviar fraud is not a new problem. It existed long before the UAE became one of the world’s most active luxury food markets. But several factors make Dubai and the wider UAE a particularly active environment for it.

Second, price pressure. Authentic sturgeon caviar is expensive because sturgeon take 8–20 years to reach maturity. A tin of genuine Beluga Huso Huso at AED 387 for 30g reflects that reality. A tin labelled “Beluga” selling at AED 80 does not contain what the label claims.

No CITES Label — or a Label With Missing Fields
Every legal tin of sturgeon caviar sold internationally must carry a CITES (Convention on International Trade in Endangered Species) label. This is a requirement of international law under Appendix II of CITES for all Acipenseridae species.
The label must include: the species name in Latin (e.g. Huso huso for Beluga, Acipenser gueldenstaedtii for Osetra), country of origin, producer farm code, harvest date, lot number, and net weight in grams. If any of these fields is absent, the label is non-compliant.
If the tin has no CITES label at all, do not buy it — regardless of price, branding, or what the seller tells you.

The Price Is Too Low for the Claimed Species
Beluga (Huso huso) is the rarest commercially traded sturgeon species. It requires 15–20 years to reach maturity. A 30g tin of genuine malossol-grade Beluga in the UAE starts at approximately AED 337–387. Almas Albino Beluga starts at AED 1,692 per 30g.
Osetra is 7–10 years to maturity. Baerii Siberian is 4–6 years. The price differential between species exists because the biology demands it. If you see “Beluga caviar” at AED 80–150 for 30g, it is not Beluga.

Wrong Texture — Eggs That Burst Too Easily or Feel Dry
Malossol-grade sturgeon caviar has a specific texture. Each egg should hold its shape on the spoon but release cleanly with gentle pressure — not require force to break. Over-salted or poorly processed caviar produces eggs that feel desiccated and taste sharply briny.
Lumpfish roe and capelin roe — common substitutes — are significantly smaller (1–2mm diameter versus 2.5–4mm for sturgeon), and have a rubbery, bouncy texture that is immediately distinct from genuine sturgeon caviar.

Unpleasant or Fishy Smell
Fresh, properly handled sturgeon caviar smells clean and oceanic — a faint briny note with no strong fishiness. A strong, pungent odour is the most reliable indicator of improper cold-chain handling, past-date stock, or low-quality processing.
Caviar stored above 4°C — even briefly — degrades quickly. This is especially relevant for online purchases in the UAE, where delivery logistics can compromise temperature if the supplier is not using verified cold-chain packaging.

The Supplier Cannot Name the Farm or Provide Provenance
Every credible source of authentic caviar should be able to tell you exactly where the product comes from: the country, the aquafarm, and the specific harvest batch. A supplier who responds with vague answers like “it comes from Europe” or “trusted suppliers” cannot verify their chain of custody.

No Malossol Designation
Malossol means “lightly salted” — a salt content of 3–5% by weight. This is the standard for premium-grade sturgeon caviar. It allows the true flavour — buttery, oceanic, and nuanced — to come through. Caviar processed at 6–10% salt is cheaper to produce and has a longer shelf life, but masks inferior quality with sharpness.
Every product in our shop is malossol grade. If a tin does not specify salt percentage, the default assumption should be that it is not malossol.

No Cold-Chain Delivery Guarantee
Caviar must be kept at 0–4°C from the moment it leaves the processing facility to the moment it reaches the buyer. Any interruption in that cold chain degrades the product. Standard courier services in the UAE do not guarantee refrigerated delivery.

What CITES Certification Actually Means (And How to Read a Label)
CITES — the Convention on International Trade in Endangered Species — is the international treaty that regulates trade in species at risk of overexploitation. All sturgeon (family Acipenseridae) are listed under CITES Appendix II, meaning international commercial trade is legal only with proper documentation.
For caviar buyers in the UAE, every tin of legally imported sturgeon caviar must carry a CITES-compliant label. CITES specifies exactly what information this label must contain.
How to Read a Caviar CITES Label
- Species code: A two-letter abbreviation identifying the species (HH = Huso huso Beluga · AG = Acipenser gueldenstaedtii Osetra · AB = Acipenser baerii Siberian). Verify the code matches the species name on the outer packaging.
- Source code: W (wild) or C (aquaculture). In 2023, wild-caught Caspian sturgeon was effectively banned from commercial trade. All legal fresh caviar sold today should carry the C code. A W code is now a red flag.
- Country of origin: Two-letter ISO code for the producing country.
- Year of harvest: Cross-reference against the best-before date. Malossol caviar typically has a shelf life of 4–6 weeks from harvest.
- Producer/farm code: Identifies the specific farm. Legitimate farms are traceable in the CITES caviar registry.
- Lot number: Enables batch traceability. Any legitimate supplier should be able to trace a lot number back to a specific harvest batch.
Species Substitution: The Most Common Fraud in the Caviar Market
Of all types of caviar fraud, species substitution is the most prevalent — and the hardest for a non-expert to detect. It involves selling a cheaper, more accessible species under the name of a rarer and more valuable one.
Common Substitutions to Know
Osetra sold as Beluga. Both are genuine sturgeon caviars. Osetra is excellent. But Beluga commands a higher price because of the species’ maturation time and larger egg size. Check the species code: HH for Beluga, AG for Osetra.
Baerii sold as Osetra. Siberian Baerii is a quality product when properly processed. It is not Osetra. The species codes are AB (Baerii) versus AG (Osetra). If a tin labelled Osetra carries the AB code, the labelling is wrong.
Lumpfish roe (Cyclopterus lumpus) sold as sturgeon caviar. Often artificially coloured black or red. Does not require CITES documentation. A tin of lumpfish roe labelled as sturgeon caviar without a CITES label is illegal under international trade law. The texture test in Sign 3 will detect this immediately — the eggs are smaller and have a completely different mouthfeel.
